Did you know you can pickle your own onions in minutes? This is called a quick-pickle (naturally). Here’s my how-to. They are the best garnish for tacos, salads, sandwiches, soups, burgers, wraps... you name it! I think we're going to try and have some of these on-hand at all times, they were so good. INGREDIENTS: 1 medium red onion, very thinly sliced ½ cup water ¼ cup distilled white vinegar ¼ cup apple cider vinegar or additional white vinegar 1 ½ tablespoons maple syrup or honey 1 ½ teaspoons fine sea salt ¼ teaspoon red pepper flakes (optional, for heat) METHOD Put your onions in a jar Combine all of the other ingredients in a saucepan and bring to a simmer for a couple of minutes, stirring occasionally. Pour brine over the onions, make sure they're covered. Allow to cool, seal them in a jar, and store them in the fridge :) They should last 1-2 weeks. And seriously, try them on everything.
