Banana stem / vazhapindi is one of the best used healthy veggies. This is one of my favourite ways of cooking it. Banana stem is a rich source of fibre and helps in weight loss. Its high fibre content creates a feeling of satiation and hence, reduces the intake of food. It also helps ease constipation. Banana stem is rich in potassium and vitamin B6 just like the fruit. Clean and chop bana stem into small pieces. Mix it with 1 tbsp curd and 1 tsp turmeric powder. Keep aside for 20 mnts. In a tawa, splutter mustard seeds with red chilly and curry leaves in 2 tbsp coconut oil. Squeeze the banana stem well to drain out all liquid content and add to the tawa. Add salt to taste, mix well and cook closed for 10 mnts. Open lid and add half grared coconut. Mix well.
